The capital of olive oil

Trevi is considered home to the finest of DOP Umbria Colli Assisi-Spoleto extra-virgin olive oils. Silvery-leaved olive trees stand out against the gentle green hills of Umbria: in many ways, one could say that the olive tree is an excellent symbol for the entire region. Trevi is active on the board of governors of the National Association of Olive Oil Towns, serving as vice-chair.

The Olive Slopes, an agricultural world heritage site

Trevi and its vast olive groves are located within the “Assisi-Spoleto Olive Slopes”. The FAO has declared this landscape in the Appennine foothills an agricultural world heritage site. Indeed, olive tree farms are an example of a “living cultural landscape”, that is, a unique and unrepeatable work “by the combination of humans and nature”.

Oil mills and producers

Acidity under 0.65% and polyphenols that must be equal to or greater than 100-150 ppm depending on the area; the flavor must have a perceptibly fruity, bitter, spicy intensity.

Traces of history

The olive tree is a Biblical and universal symbol of peace. It reminds us of great spiritual values, which are so important in a land that has been called the “Holy Land of Italy” – and not just because of its land features.

The olive, an extremely long-living tree that grows slowly, can also represent the ability – so typical of this region – to preserve centuries-old traditions passed down from generation to generation.

Historical oil mills

The old Cardarelli mill is perhaps the best preserved. It was used by the family until 1920.

The hundred-year-old olive tree

The hundred-year-old tree is found in the village of Bovara, and is known as the Olive Tree of Saint Emilianus.
